A more affordable alternative to the classic lasagna - this bread lasagna recipe is a perfect quick fix for your Italian food cravings. All you need is just a handful of ingredients available in the pantry.
Ingredients:
- 1 bread
- 1 tuna can
- 1 carrot (grated)
- 1 onion
- 5 cloves of garlic
- ½ inch ginger (2 tsp)
- 1 sprig of curry leaves
- 1 scotch bonnet
- 1 capsicum
- 1 leek
- 1 tomato
- Tomato sauce
- Chili and garlic sauce
- Fried chicken chili sauce
- Oyster sauce
- Soya sauce
- 6 eggs
- Salt
- Pepper
- Vegetable oil
How to make:
- To make the sauce, heat oil in a pan and add chopped onion and curry leaves.
- Add in grated garlic and ginger and chopped capsicum and scotch bonnet.
- Add in grated carrot and leeks.
- Add in the canned tuna.
- After a few minutes, add in the sauces and mix.
- Add in salt and pepper to taste and let it simmer at low heat for three minutes.
- In a separate bowl, beat the eggs and mix in salt and pepper.
- For the lasagna sheets, cut off the crusts of the bread and place it in a tray.
- Spread the prepared red sauce on it, add the egg mixture, and then place in bread slices and repeat.
- Top off the top layer with sliced tomato.
- Place it inside an oven and bake until the egg is cooked.
