Sun Badhige: Bread Lasagna

Bread Lasagna.

A more affordable alternative to the classic lasagna - this bread lasagna recipe is a perfect quick fix for your Italian food cravings. All you need is just a handful of ingredients available in the pantry.

Ingredients:

  • 1 bread
  • 1 tuna can
  • 1 carrot (grated)
  • 1 onion
  • 5 cloves of garlic
  • ½ inch ginger (2 tsp)
  • 1 sprig of curry leaves
  • 1 scotch bonnet
  • 1 capsicum
  • 1 leek
  • 1 tomato
  • Tomato sauce
  • Chili and garlic sauce
  • Fried chicken chili sauce
  • Oyster sauce
  • Soya sauce
  • 6 eggs
  • Salt
  • Pepper
  • Vegetable oil

How to make:

  • To make the sauce, heat oil in a pan and add chopped onion and curry leaves.
  • Add in grated garlic and ginger and chopped capsicum and scotch bonnet.
  • Add in grated carrot and leeks.
  • Add in the canned tuna.
  • After a few minutes, add in the sauces and mix.
  • Add in salt and pepper to taste and let it simmer at low heat for three minutes.
  • In a separate bowl, beat the eggs and mix in salt and pepper.
  • For the lasagna sheets, cut off the crusts of the bread and place it in a tray.
  • Spread the prepared red sauce on it, add the egg mixture, and then place in bread slices and repeat.
  • Top off the top layer with sliced tomato.
  • Place it inside an oven and bake until the egg is cooked.
